Carnitas Tacos
Taco ‘bout delicious!
I don’t know about your family, but in mine, we love tacos! Fish tacos, steak tacos, chicken tacos, pork tacos.. They are all a favorite around here.
Today, I am going to share how we make our carnitas tacos.
Ingredients
3-4 lbs pork shoulder
2 tbs olive oil
salt and pepper
1 large onion
2 oranges
1 lime
3 cloves garlic
1 cup chicken broth
1 tbs chili powder
1 tsp cumin
1 tsp oregano
1 bay leaf
How to make Carnitas
I am just going to warn you now, your house will smell amazing! The hard part, waiting for it to finish cooking.
Cut pork into large 3 inch chunks
Heat large pan with olive oil
Season meat with salt and pepper
Place pork into the pan and brown a bit (2-4 mins) you may have to do this in batches
Add meat to crock pot
Season with spices and add minced garlic
Peel rind off of the orange about 2-3 pieces
Quarter oranges, squeeze the juice into the crockpot, add rind and the oranges.
Peel rind off lime about 1 piece
Cut lime in half, squeeze lime juice and add lime to the crockpot
Cut a large onion into chunks and add crockpot
Add chicken broth
Mix all of this together and cook on high 4-5 hours or on low 8 hours until pork is fork tender. Discard the bay leaf.
13. Turn oven on broil. Pull pork into large chunks or shred it. place on baking sheet. Spoon some of the juices over the top and broil for 4-5 minutes. This will give it a nice little crisp. Spoon a little more juice over the top and broil an additional 5 minutes. Spoon a little more juice over the top and serve.
Taco Shells
We like to do this two different ways. The first way is it fry corn tortillas in a small pot of avocado oil. You can do this until they are crispy or just slightly brown and still soft. they are delicious!
The second way is it just heat over an open flame.
Street Taco Sauce
You can leave this one out!
Ingredients:
1/2 cup sour cream
1/4 cup mayo
a little honey about 1 tsp
salt and pepper
jalapeno diced
green onion diced
cilantro
half a lime juiced
Mix all together and spoon over pork.
